Pumpkin Pie Pancakes (Vegan & Gluten-free!)

This mix is made with a delicious blend of oat, arrowroot, garbanzo bean, sorghum, and amaranth flour – giving some fiber and protein, with no added sugar (except the 1 Tbsp added, but you could sub for stevia!) or weird ingredients you can't pronounce, just a nutrient dense and totally yummy pancake mix!!

Add the clove essential oil, cinnamon, and pumpkin and OH MY this is the perfect fall pancake!! 

1 ¼ Cup Young Living Gluten-Free Pancake and Waffle Mix

1 Tbsp yacon or maple syrup

1 tsp. baking powder

½ tsp. baking soda

½ tsp salt

1 Tbsp ground flax mixed with 2 Tbsp water, let sit

1 tsp. vanilla

¾ Cup almond milk

¼ Cup coconut oil

1 Tbsp. lemon juice (I was out and used lime!)

1-2 drops Young Living clove essential oil

dashes of cinnamon & pumpkin spice

 

Easiest instructions ever: Mix wet ingredients and dry ingredient separately, then combine. Cook on stovetop - serve with toppings like maple syrup and of fav, peanut butter!
