Quinoa Lunch Bowl

I love quinoa. My love for quinoa runs so deep we just bought a 5lb bag from Costco.

Although it's commonly classified as a grain product, it's actually a seed that produces leafy green tops, who are in the same plant family as spinach.  Who knew!  Did you also know it has more iron (hello pregnant mamas) than any other unfortified grain product?

It's one of the best foods in my mind.  It's not only a great complex carb, but also high in protein & fibre and happens to be gluten-free as well. 

If that wasn't enough. it can also help prevent cancer (because of the saponions, phytochemicals it contains), fight obesity, and may reduce migranes because of the magnesium and riboflavin (Read The Beauty Detox Foods for more on this).

Most people don't realize though, that quinoa has an outer layer of phytic acid, which can make digestion harder on your stomach (read, here). However, you can soak your quinoa for easier digestion! 


My Fav Easy Quinoa Bowl

1/2 cup soaked and cooked quinoa

2 chopped carrots

2 mini cucumbers

2 Tbsp Hemp Hearts

1 Tbsp olive oil

Sea salt

Splash of white wine vinegar (optional)

Combine all ingredients and enjoy!
